Greetings Boss Ladies! When I stepped outside my front door this morning I was greeted by cold, crisp air. As I walked down my drive way, I noticed the tree in my front yard had started to trade in its green foliage for a more festive yellow attire. I looked across the street and sitting on my neighbors front porch were two bright orange pumpkins. And then it hit me. It’s that time of year again. That’s right ladies, it’s time to snuggle down with your softest blankets, bust out your favorite sweatpants, and light up your coziest candles because FALL IS BACK. It is by far my favorite season, especially when it comes to the food, and there is one food in particular that dominates this splendid time of year. Pumpkin spice. Whether it be scones or lattes, people go into a pumpkin spice frenzy from the moment the first leaf hits the ground. I am not ashamed to admit that I am most definitely one of those people, so it only seems fit to give you all a pumpkin spice recipe to honor the return of fall.
With a hint of cinnamon and a touch of sweet honey, this pumpkin spice oatmeal is the perfect way to start a brisk fall morning. Oatmeal will help you stay full through your day because its packed with fiber and protein. It is also rich with nutrients like iron, magnesium, and zinc. I used steel cut oatmeal because it is less processed and better for you, plus it only takes about 10 minutes to cook. However, I know you all are busy bodies so if ten minutes is too long you can always use microwavable packets, which only take about two minutes to cook. I would recommend staying away from flavored oatmeal though. Even though maple brown sugar and apple cinnamon sound appealing, they have a hefty amount of added artificial sugars.
One of the main ingredients in pumpkin spice is cinnamon, which has a lot of health benefits all on its own. This antioxidant packed spice helps fight illnesses and inflammation. It has even been proven to lower blood sugar levels and help with weight loss. If you’re a fall lover like me, you will absolutely love this meal. I like to add different kinds of fruit to mine for a little variety. My favorite is apple because it makes my oatmeal taste like apple pie.
