I absolutely hated avocado when I was younger. I refused to eat the stuff unless it was smashed up into a heavenly bowl of guacamole. It went on that way until about two years ago. I’m not sure what gave me the urge to try avocado again, but I did… and I loved it. After I discovered its delicious qualities, I went on an avocado binger. I ate it with salt and pepper, I added it to my salads, I put it on my sandwiches, and I basically made up for all the avocados I missed out on. It was during this avocado tirade that I discovered the food that has taken the world by storm. Avocado toast. I’m sure you have seen the endless amounts of avocado toast photos scattered on Instagram, Pinterest, and the covers of cooking magazines next to the tabloids at the supermarket. Basically avocado toast has become a celebrity in the world of food, and it is now one of my favorite meals to make.
Avocado is a superfood that is great for your hair skin and nails. As I mentioned in my previous post about my Feeling Fresh Salad, avocado is high in fats and packed with vitamins. You might be thinking, "wtf, fats aren't good for you, its like eating a bag of potato chips". Unlike the fats in potatoes chips though, the fat in avocados is actually really healthy for you and a necessary part of your diet.
The protein in this meal comes mostly from the eggs, and partially from the whole wheat bread. Eggs are an excellent low calorie food that has loads of protein to keep you full for hours of your busy day. They also have the added bonus of being super cheap. Sometimes I like to just use egg whites if I’m looking to get more protein with less fat because there is already a lot in the avocado. I know not everyone is a fan of the over easy style, so feel free to switch it up and scramble your eggs if that better suits you. Whole wheat bread is less processed than white bread and thus much better for you. It has more wholesome ingredients and a better concentration of nutrients to keep you hustling all day long. I recommend using Dave’s Killer thin bread. It has great nutritional content and is only 70 calories a slice. Everyone I have had try this bread so far has approved, even those who were convinced they disliked whole grain breads of any kind. Overall, this is a great meal for breakfast, lunch, or even dinner.
This dish is perfect for avocado lovers and toast lovers alike. The crunch of the toast compliments the creamy avocado, and the best news is, as always, it takes under 10 minutes. I know how busy you guys are with all the wonderful things you are accomplishing, so I wanted to make this recipe short and simple. Of course it has to be delicious as well, so I added cheese, salt, and pepper to give it a little extra flavor. Feel free to make your own additions to your dish to make it better fit your diet or your taste buds. Some of my favorite additions are tomatoes, arugula, prosciutto, veggie sausage, spinach, chia seeds, salsa, garlic powder, crushed tortilla chips, etc. As you will see in the photo above, I occasionally like to add a splash of Cholula on the top of my eggs sometimes to give it an added kick. There are hundred of variations to this dish and I can't wait to see what you guys come up with.

Ingredients:
- ½ avocado
- 1 slice of Whole Wheat Bread
- 1 egg
- ¼ cup of shredded cheese
- salt
- pepper
Directions:
1. Put bread in toaster until golden brown.
2. Cut avocado into slices and smash onto slice of bread.
3. Crack egg into pan over medium heat. Do not break yolk.
4. Cook egg until it’s no longer runny, flipping once half way through.
5. Place egg over avocado and top with shredded cheese.
6. Sprinkle with salt and pepper. Bon appetite.
