Feeling Fresh Salad

Picture a salad. What comes to mind? Probably a less than exciting vision of lettuce, tomatoes, and carrots. Does your imaginary salad look very appetizing? Probably not for most people, and I am here to tell you why. Traditional salads are basic. They lack pizazz. They have become boring with a capital B. Now I want you to revision your salad. Replace your regular lettuce with some crunchy kale, spinach, or arugula. Envision your salad topped with perfectly ripe slices of avocado and succulent chunks of cheese. Imagine taking a bit of your new and improved salad and experiencing light a hint of balsamic vinegar, not too overpowering. Your salad has started to seem a little more enticing hasn’t it.



I will admit that traditional salads are not my favorite food. It’s like seeing a TV show rerun too many times, it just doesn’t have the same appeal after a while. However, ladies I am here to tell you salads do not have to be boring. There are hundreds of ways to spice up your leafy greens to make them the most enjoyable meal of your day. So in efforts to take salad to the next level, I created the feeling fresh salad. It will not only leave you feeling like the epitome of health, it will give you the salad satisfaction you have been craving.

The feeling fresh salad is filled to the brim with nutrient rich superfoods. The bed of greens in this salad offers a load of diverse nutrients like iron and vitamin C. The avocado is healthy source of fat and is great for your skin, hair, and nails. I put salt and pepper on mine because I like a little extra flavor. I added Morning Star maple veggies sausage to my salad as a source of protein. I know veggies sausage may sound strange. Believe me, I was not very open to the idea in the beginning. However, these veggies sausages are actually really good. Plus, they only take 1.5 minutes to cook in the microwave, making the perfect protein go to when I’m in a rush. The maple flavor is my favorite. I would recommend giving them a try. Overall, this salad is anything but boring and is much more satisfying than the basic lettuce and tomatoes. You can always add and substitute more toppings as well. Blueberries, walnuts, feta, hard boiled eggs, and grilled chicken are just a few of my favorites.


Cook Time:5 Minutes


Ingredients:

½ avocado

2 cups of power greens mix

1 Tablespoon of balsamic vinegar

2 maple veggie sausages

¼ cup of cheese (your choice)

pinch of salt (optional)

pinch of pepper (optional)


Directions:

1. Put spring mix in a bowl and toss with balsamic vinegar.

2. Cut avocado into slices and sprinkle with salt and pepper.

3. Microwave veggie sausages for 1 ½ minutes or until hot.

4. Dice up veggie sausage and toss into salad.

5. Top with cheese and bon appetite!
