When you think of nachos what comes to mind? Images of golden cheese and crispy tortilla chips are probably dancing through your head right now. While I think we can all agree nachos are tasty, they’re not very nutritious. But fear not boss ladies, I am here to save the day with a healthy alternative. Introducing sweet and satisfying apple nachos. For under 300 calories they are the perfect snack to satisfy your hunger and curb your cravings. This dish packed with healthy fats and it takes practically no time to make. No matter how crazy our day is we can all find five minutes to devote to a healthy meal, especially one as scrumptious as this. With crisp, refreshing apples and rich, creamy peanut butter, this will quickly become one of your favorite five minute meals.
As you all know I am addictedto peanut butter. I eat the stuff by the spoonful and always love to work it into my recipes. It is cheap and packed with protein to power me through whatever shenanigans I have planned that day. Whether I am in between class and work or searching for a pre workout snack, this is my go to meal. The cheerios and marshmallows help to curb my sweet tooth so I don’t end up binge eating a pint of Ben and Jerry’s at the end of the night. It is also a quite the crowd pleaser and a great side dish for you next potluck if you’re running low on time. I got this recipe from one of my friend’s moms. She would always make an enormous plate of apple nachos for our soccer team dinners when I was younger. I fell in love with the recipe and integrated it into my own diet. I made a huge plate of apple nachos for my Friendsgiving feast last year and they were all gone by the end of the night.

Ingredients:
1 Medium Sized Apple
1 Tablespoon of Peanut Butter
1 Tablespoon of Honey
¼ Cups of Cheerios
¼ Cups of Marshmallows

Directions:
1. Cut the apple into thin slices and arrange them on a plate.
2. Drizzle the peanut butter and honey across the apples. (warm up the peanut butter for 30 seconds in the microwave if it is too thick to drizzle)
3. Sprinkle the Cheerios and marshmallows across the apples.
One of the best things about this recipe is that you can always add different toppings to keep things interesting. Some of my favorites are vanilla Greek yogurt, cinnamon, mini dark chocolate chips, crushed graham crackers, dried blueberries, pretzels, walnuts, and Apple Jax. I even made a peanut butter and jelly version one time that was FANTASTIC. This recipe can be easily customized to your taste buds, so get creative with it.
